Cajun Ribs
2 c. baby carrots
1 onion (chopped)
1 green bell pepper (chopped)
1 red bell pepper (chopped)
2 t. garlic (minced)
2 T. Cajun or Creole Seasoning
4 lbs pork ribs
1 can stewed tomatoes
2 T. water
1 T. cornstarch
Mix carrots, onion bell peppers, garlic cajun seasoning in the crock pot.
Put ribs in crock pot. Put tomatoes with liquid over ribs.
Cook Low 6 to 8 hours.
Make sauce by taking meat and vegetables from crock pot. Add water, cornstarch and 1 T. Cajun seasoning to the juices in crock pot. Stir well.
Cook (with no lid) High 20 to 30 minutes.
When sauce has thickened add meat and vegetables back to crock pot and coat with sauce.
We eat this over rice.
