Beef Meal 1 1/2 lb. lean beef short ribs 1/2 c. flour 1 1/2 t. paprika 1 t. salt 1/2 t. dry mustard 2 onions (sliced, pull apart to make rings) 2 garlic cloves (chopped) 1 c. light beer In a pan brown the short ribs on all its sides. Use high setting. Drain the fat off. Put in onions. Put ribs in slow cooker. Add flour, paprika, salt, and mustard over the top of ribs. Then put in garlic, and beer. Cook: Low 6 to 8 hours or High 3 to 4 hours. Makes 6 servings Points 7 per serving
Beef Stew 1 1/2 lbs. beef bottom round (cubed) 3 T. flour 1 lb. new potatoes (quartered) 2 c. baby carrots 1 can tomatoes (diced) 1/2 c. dry red wine 1 onion (chopped) 2 garlic cloves (minced) 1 t. thyme 1 T. balsamic vinegar Coat the beef with the flour. Put beef, flour, potatoes, carrots, tomatoes, wine, onion, garlic, and thyme in slow cooker. Cook: Low 10 to 12 hours, or High 5 to 6 hours. Add vinegar and stir. Serves 8 Points 4 per serving
