With Pork 1/2 t. cardamom seeds (crushed) 1 T. lemon 1 t. ginger 1 lb. pork fillet 1 T. oil 1 T. curry 1 can coconut milk 1 c. coconut 2 kiwifruit (peeled and sliced) Brown pork in pan with oil. Put everything in slow cooker. Cook: Low 2 to 4 hours Server over rice
With Beef 1 t. sesame oil 1 lb. steak (flank style thinly sliced) 1 c. onion (sliced) 1 c. red bell pepper (strips) 3 c. bok choy (sliced) 1 T. chile powder 1 T. garlic 2 T. cilantro 1 can coconut milk 1 c. coconut 1/2 t. salt 1/2 t. pepper 1 T. lime Brown beef in pan with oil. Put everything in slow cooker. Cook: Low 2 to 4 hours. Server over rice
