Crock Pot Recipes Thai Coconut

Here are some crock pot recipes thai coconut.




With Shrimp and Rice

2 cans chicken broth

1 c. water

1 t. coriander

1/2 t. cumin

1 t. salt

1/2 t. cayenne pepper

1/3 c. lime juice

7 cloves garlic (minced)

1 T. ginger

1 onion (chopped)

1 red bell pepper (chopped)

1 carrot (shredded)

1/4 c. flaked coconut

1/2 c. raisins

2 c. rice

1 lb. shrimp (peeled and deveined)

2 oz. snow peas (strips)

Put everything in slow cooker except shrimp and snow peas.

Cook: Low 3 1/2 hours (till rice is tender)

Add shrimp, 1 c. water, and snow peas.

Cook: Low 30 minutes more

Sprinkle top with coconut.







Crock Pot Recipes Thai Coconut Chicken Soup

1 can chicken broth

2 T. lime juice

2 T. lemon juice

4 T. fish sauce

4 oz. chicken breast (bite size pieces)

1 c. coconut

5 oz. coconut milk

1 red Thai chile pepper (crushed) add more if you like it hotter

1 t. cilantro

Put everything in slow cooker.

Cook: Low 2 to 4 hours.







Vegetables

1 c. coconut milk

1/2 c. garden peas (if frozen unthaw in hot water then put in cold water)

1/2 c. green beans

1/2 c. mushrooms (sliced)

1 c. cabbage (shredded)

2 T. shallots (sliced thin)

1 T. soy sauce

1 T. sugar

1 c. coconut

1 T. Thai chile peppers (sliced thin)

1 T. peppercorns (crushed)

1 T. lime juice

Cook: Low 1 to 2 hours till warm.




With Pork

1/2 t. cardamom seeds (crushed)

1 T. lemon

1 t. ginger

1 lb. pork fillet

1 T. oil

1 T. curry

1 can coconut milk

1 c. coconut

2 kiwifruit (peeled and sliced)

Brown pork in pan with oil. Put everything in slow cooker.

Cook: Low 2 to 4 hours

Server over rice




With Beef

1 t. sesame oil

1 lb. steak (flank style thinly sliced)

1 c. onion (sliced)

1 c. red bell pepper (strips)

3 c. bok choy (sliced)

1 T. chile powder

1 T. garlic

2 T. cilantro

1 can coconut milk

1 c. coconut

1/2 t. salt

1/2 t. pepper

1 T. lime

Brown beef in pan with oil. Put everything in slow cooker.

Cook: Low 2 to 4 hours.

Server over rice
