Crockpot Weight Watchers Recipes

We have a couple of special crockpot Weight Watchers recipes below. Plus links to more Weight Watcher recipes for the slow cooker.

French Chicken

3 lbs. chicken pieces (skinless)

2 c. baby onions (frozen is good)

2 c. baby carrots

3/4 lb. new potatoes (cubed)

1 1/2 c. chicken broth (low sodium)

2 celery stalks (cut into pieces)

2 strips turkey bacon (diced)

1/4 t. thyme

1/4 t. pepper

1/4 c. parsley (chopped)

2 T. tarragon or mint (chopped)

2 T. lemon juice

1/2 t. salt

Put into slow cooker: chicken, onions, carrots, potatoes, broth, celery, bacon, thyme, and pepper.

Stir.

Cook: Low 8 to 12 hours or High 4 to 6 hours.

Remove Chicken and Vegetables from slow cooker.

Skim the fat off the top of the juice left in slow cooker.

Mix into juice liquid parsley, tarragon or mint, lemon juice, and salt.

Pour liquid over chicken and vegetables and serve.

Serves 8

Jambalaya

1 c. lean ham (boiled, diced)

2 onions (chopped)

2 celery stalks (sliced)

1/2 green bell pepper (de-seed and chopped)

1 can tomatoes

1/4 c. tomato paste

3 garlic cloves (minced)

1 T. parsley (chopped)

1/2 t. thyme

2 cloves

1 T. vegetable oil

1 c. long grain white rice

1 lb. shrimp (medium sized, peeled and deveined)

In the slow cooker put ham, onions, celery, bell pepper, tomato, tomato paste, garlic, parsley, thyme, cloves, oil, and rice.

Stir.

Cook: Low 8 to 10 or High 4 to 5 hours.

Put shrimp in slow cooker.

Cook 1 more hour. (shrimp should be a pink color)

Serves 6
