Custard Sweet Potato

Sweet Potato Custard
1 can sweet potatoes (drained, 16 oz.)
1 can evaporated milk.
1/2 c. brown sugar
2 eggs (beaten)
1 t. cinnamon
1/2 t. ginger
1/4 t. salt
Topping:
nutmeg and/ or whip topping
Blend in a blender sweet potatoes and 1/4 c. milk. Then mix in brown sugar, eggs, cinnamon, ginger, and salt and blend. Put into crock pot.
Cook: High 2 to 3 hours.
