Diabetic Rice Recipes

Some diabetic rice recipes.

Just Rice

1 cup rice (regular - not minute rice)

1 c. water

Put rice and water in crock pot.

Cook: Low 6 to 8 hours

NOTE: Make enough for several meals and store the rest in fridge.

If you have packaged rice with flavoring you like then cutting out the butter and salt will help with fat. It still tastes great!




With Chicken

1 can Cream of Chicken Soup (Healthy Request)

1 c. water

1 c. carrots (shred)

2/3 c. rice (instant)

1/2 onions (chop)

1 1/2 c. chicken (diced)

1 c. Velveeta cheese (light)

1 c. peas

1/4 t. pepper

Use Pam spray to inside of crock pot. Stir everything together in a bowl and then pour into slow cooker.

Cook: Low 4 hours

4 servings (1 cup each)

Per Serving:

295 cal.

32 gm. Carb.

6 gm fat

30 gm protein




Spanish

1 lb. ground beef (extra lean)

1 can diced tomatoes (undrained, 14 oz.)

1 can tomato sauce (8 oz., Hunts)

1 1/2 c. tomato juice (low sodium)

1 1/2 c. onion (chopped)

2 c. bell pepper (green, chopped)

1 c. rice (instant)

1 T. Worcestershire Sauce

2 T. Splenda (or other sweetener)

1 1/2 t. chili seasoning

Brown ground beef. Use Pam spray on the inside of the slow cooker. Put everything together in pot and stir.

Cook: Low 6 to 8 hours

Servings 8 (1 cup each)

Per Serving:

3 gm fat

15 gm protein

19 gm carb.
