Potato Casserole in the Crock Pot
1 can cream of chicken soup
1 c. sour cream
1/4 c. onion
1/4 c. butter (melted)
3 T. butter (melted)
1 t. salt
2 lbs. potatoes (peeled, diced)
2 c. cheddar cheese (shredded)
1 1/2 to 2 c. stuffing mix
Mix together soup, sour cream, onion and 1/4 c. butter.
Add potatoes, cheese to slow cooker. Put the soup mixture in the slow cooker. Add stuffing mix and pour the 3 T. butter over the top.
Cook: Low 8 to 10 hours or High 5 to 6 hours.
