Slow Cooker Recipes for Diabetics

Chicken

2 1/2 c. chicken broth

1 c. carrots (chopped)

1 c. celery (chopped)

1 c. turnips (diced)

3/4 c. onion (chopped)

2 cans tomatoes (whole & peeled)

1 t. thyme

1 t. pepper

5 c. chicken (diced)

Put vegetables in bottom of crock pot. Next put chicken,

then spices and chicken broth.

Cook: Low 2 to 3 hours

Add tomatoes

Cook: Low 1/2 hour

Per 1-cup serving: 135 Calories; 20 g. Protein; 3 g. Fat; 7 g. Carbohydrate; 149 mg. Sodium





Slow Cooker Recipes for Diabetics Bean Soup

2 T. olive oil

1 carrot (chopped)

1 rib celery (sliced)

1 onion (chopped)

1 leek (chopped)

3 leaves cabbage (cut into strips)

4 c. chicken broth

1 t. thyme

1 garlic clove (chopped)

2 c. squash (peeled & diced)

1 can white beans (rinse & drain)

1 c. chicken (diced)

Put oil in bottom of crock pot. Then add in order vegetables,

chicken, spices, beans, and chicken broth.

Cook: Low 2 to 3 hours

Calories: 123, Protein: 5 g; Sodium: 464 mg; Fat: 4 g; Carbohydrates: 19 g







Meatloaf

1 lb. ground turkey (1/2 breast & 1/2 regular)

1/3 c. catsup

1 c. breadcrumbs (whole wheat)

3/4 c. onion (chopped)

1 t. basil

2 t. oregano

2 cloves garlic (minced)

1 egg

1/2 c. carrots (shredded)

1/2 c. bell pepper (minced)

Cook: Low 8 to 10 hours

Calories: 278, Protein: 24 g, Sodium: 420 mg, Fat: 10 g, Carbohydrates: 23 g




Pork Roast

2 lbs pork loin

1 c. apple juice

1 T. worcestershire sauce

Trim fat from pork loin and put into crock pot. Put apple juice,

and worcestershire sauce.

Cook: Low 8 to 10 hours

Calories: 194, Protein: 17.5 g, Sodium: 66 mg, Cholesterol: 56 mg,

Fat: 11.2 g, Carbohydrates: 4.8 g
