Fajitas Beef 1 lb. flank steak (trimmed of fat, and cut into six pieces) 1 can Mexican tomatoes (stewed, drained) 1 onion (sliced) 1 red bell pepper (sliced and de-seed) 1/4 c. jalapeno peppers (diced) 2 garlic cloves (minced) 1 t. chili powder 1 t. cumin 1 t. coriander 1/4 t. salt 6 flour tortillas (10 in.) 1/3 c. cheddar cheese mexican flavored (reduced fat) Put the steak, tomatoes, onion, bell peppers, jalapenos, chili powder, cumin, coriander, and salt into the slow cooker. Cook: Low 8 to 10 hours, or High 4 to 5 hours. Take the beef out and shred it and put back in crock pot. Heat tortillas, then add beef mixture and cheese. Serves 6 points 6 per serving
Pasta Sauce 2 Turkey sausage Italian (remove casing) 1 onion (chopped) 1 garlic clove (minced) 2 cans tomatoes (crushed) 1/2 t. basil 1/2 t. oregano Put the sausage in a pan and brown it. Put sausage in slow cooker. Add onion and garlic to slow cooker. Then put in tomatoes and stir. Cook High 2 hours Add oregano and basil and stir. Cook another hour. Eat over pasta. 8 servings points 1 per serving
