Weight Watchers Crockpot

Some chicken Weight Watchers crockpot recipes.

Chicken Meal

2 cans great northern beans (rinse and drain)

1 c. water

2 oz. turkey kielbasa (diced)

1 onion (chopped)

1 carrot (sliced)

4 garlic cloves (minced)

2 chicken thighs (skinned, cut into pieces)

1 can tomatoes (stewed)

1 celery stalk (chopped)

1/2 t. marjoram

1/2 t. pepper

1/2 t. sage

1/4 t. cloves (ground)

1/2 t. salt

Add beans and water to the slow cooker.

Using medium heat, brown the kielbasa in a pan.

Put onion, carrot, and garlic in slow cooker.

Add sausage on top.

Then add chicken, tomatoes, celery, marjoram, pepper, sage, salt, and cloves.

Cook: Low 8 to 12 hours, or High 4 to 6 hours.

Serves 6

Chicken and Beans

4 c. chicken broth (low sodium)

1 lb. chicken breasts (skinless, boneless, cut into pieces)

2 cans northern beans (rinse and drain)

2 zucchini (diced)

2 onions (chopped)

1 T. cumin

2 garlic cloves (minced)

1 t. chili powder

1 c. corn (frozen)

1/2 c. sour cream (fat free)

1/2 t. salt

1/4 t. pepper

Put the broth, chicken, beans, zucchini, onions, cumin, garlic, and chili powder into the slow cooker.

Cook: Low 7 to 8 hours or High 3 1/2 to 4 hours

Put in corn and sour cream, and stir.

Cook 5 more minutes.

Sprinkle with the salt and pepper.

Serves 8
